A thin crust is the hallmark of this archetypal pizza dish. If it's too thick, you might lose the nuance of the simple flavors that make this a classic. The key is balance: Avoid overloading any one topping or flavor. Instead, let the simple ingredients blend harmoniously.\n
Pizza Dough Napolitana
Stir warm water (just above room temperature), yeast and sugar together in a large bowl, then let stand until the yeast is dissolved (3–5 minutes).
Stir in bread flour (or other high-elastic flour), whole grain flour and salt until the dough begins to form. This dough will be slightly more wet than normal bread dough. Let the dough sit for about 5 min.
Turn the dough out onto a floured counter top or other work surface. Knead the dough until it feels smooth and elastic (usually around 10 minutes).
Add approximately 2 tablespoons of olive oil to a large bowl. Place the dough in the bowl and turn until the surface of the dough has been completely coated. Cover the bowl with plastic wrap or a clean towel and set it aside to rise. The ideal location is warm, dry and draft-free. The dough is ready once it has doubled in size, approximately one hour.
Minimalist Margherita
Classic Neapolitan pizza cooks off the radiant heat of a pizza stone. Place your stone on a rack in the bottom third of the oven and preheat 500°F. Allow the stone to absorb heat in the oven for at least 20 minutes once you've reached that temperature.
Divide the dough in half and place on a floured surface. Roll each into a 12-inch circle.
Place toppings on the rolled-out crust. Classic toppings include Roma tomatoes and mozzarella slices. If you want to add sauce, try our Better than Mom's Pizza Sauce recipe, made from fresh tomatoes and basil—but know that you'll be bucking tradition!
Drizzle olive oil the tomatoes and top with torn basil. The basil is most flavorful if you tear it just before placing the pizza in the oven.
Use a floured pizza peel to transfer the dough to your pizza stone. Leave the pizza stone in the oven and be careful. It's going to be hot!
Let the dough bake. This happens fast and because each oven is different. There isn't a single rule of thumb for this step, so you'll need trust your instinct and watch the telltale sign as the crust bubbles crisp and then brown on top. The crust should rise within 2 minutes and brown within 5 minutes. Watch it carefully and get a feel for the right moment to take it out of the oven.
Remove the crust from the oven. Combine another tablespoon of olive oil with the garlic and brush the outer ring of the crust as a final garnish and flavor. Cool for about five minutes before serving.
